I suggest just doing a logout/login when you Mac becomes unusually slow. I rarely have to do that, but it worked for me each time.
It's also logical since a logout kills anything that you could have activated after login, and by anything, I mean it
Anyway it's nothing like what I was going through on OS 9. Mac OS 9.2.2 was relatively stable for me, but like since System 7 I had to reboot often just to get performance back after a few hours of use. I must admit than in those days I was always running the bare possible minimum of RAM, and a lot of VM. The logout/login trick shows that in OS X, the problem is not related to Virtual Memory (at least for me).
