Looking for recommendation: Mac as file server with a raid

I am contemplating purchasing an old Mac to serve as a file server so my other Macs can connect to it to perform backups, store movie clips, photo librarie, etc. There are some very nice 750 gig drives out there that I would like to use to create a RAID localy connected to that server machine but available on the wired and the wireless network.

What Mac would you recommend to use with those new 750 drives?
