The iPhone can and will do everything you describe above eventually, I am 100% certain of it. There are no technical constraints.
BTW, AT&T don’t make any money from YouTUBE but they still allow it on the phone. iChat is a no-brainer, and will likely arrive in the next update to the phone (which will be a major revision IMO), due once Leopard is released for the Mac. I’ve been saying this since May
