SSD & Symbolic Links to some folders in Home Directory

Ok
Hardware:
Late ‘08 MacBook Pro, Lion (10.7.4), 120GB OWC SSD (in a DataDoubler kit) & 500GB SATA HDDI want to move some of the folders in my home directory to the SATA HDD and free up some space on the SSD.
I’ve copied the following Folders:
Document, Downloads, Movies, Music & VirtualBox VMs over to the HDD but I can’t for the life of me figure out to replace the original folders with either aliases or Symbolic Links.I’d prefer to use Symbolic Link(s) as they’re more robust, but the Finder won’t let me (temporarily) rename the original Folders so I can create alias files. The Finder spits the dummy.
Does anyone know how I can do this or can point me to a place on the interweb that explains how I can do this ?
